Marinated Jerk Chicken
1 Package Jerk Seasoning
¼ c. White Vinegar
¼ c. Canola Oil
1 Orange (juiced)
Mix all ingredients together to make a paste, rub on chicken and marinte overnight. Will coat 5-6 pounds of meat.
Jamaican Rice & Peas
2 c. White Rice
1 can Red Kidney Beans
1 can Coconut Milk
2 ½ c. H²O
3 Tablespoons Jer

1 can Red Kidney Beans
1 can Coconut Milk
2 ½ c. H²O
3 Tablespoons Jerk Seasoning
3 Scallion (Green Onion) stalks, chopped
Salt and Pepper to taste
Bring coconut milk, water, and seasoning to a boil.
Add rice, reduce heat to a simmer and cover. Cook 25-30 minutes or until all liquid is absorbed. In a separate sauce pan heat drained and rinsed kidney beans. Combine beans and scallions to the rice fluff and mix together.
Order a 3 ounce pouch of Jerk Seasoning. A single pouch will be enough for about 5 pound of meat, poultry, fish, or vegetables. $6 Per Package.
